Default Staggered rims

I'm thinking about running late offset 225/50/15 front and 245/50/16 on the rear.

YES...15's on the front and 16's on the rear.

Anyone ever tried this staggered setup?

Your thoughts.

Um? no. Never tried it. Not sure why you would, since your car will fit 15" or 16" front or rear. I have seen it on a modified 914 - 8x15 front and 9x16 rear.. in part because of a desired "rake" as well as ability to fit the wheels in the fenders.. ie, an 8x16 wasn't going to fit up front in this application.

What width rims will you use? 7x15 and 8x16?

That would be a pretty severe rake and the rear tire would put more of a gear in, too.
Not a set-up I would do.

It is a pretty severe rake. Almost 2 inches. I could continue to run the 215/60/15's up front and the 245/50/16's in the rear and only have a .6" rake. The tradeoff on the 15's is the taller sidewall for the smaller rim.

Doing it because I have 2, 16x8 rims for the rear. Eventually will change the whole car over to 16's, but need to make the transition slowly with current economics.

Bad idea. You want 1 degree positive rake in the rear, no more. Could run at zero. Negative is bad. Your avatar looks like you are running negative now. Fix it at the spring plate not the wheels. I'd run 16's. 8" wide in the front and 9's or 9.5's in the rear. Will look nice and handle well if you adjust the rake properly.

A 245/50/16 tires would have a sidewall 61mm tall with overall tire height of approx. 528mm,

215/60/15 tires would have a sidewall 64.5 mm tall with overall tire height of approx. 510mm

I would not do it, nor would I want to drive it on the street or track...
