Default Toyo Proxes

Thinking of driving my 996 GT3 from Northern Cal to SoCal- Car currently has the stock wheels running on Toyo Proxes. The Proxes are not approved for highway use- is that strictly due to hydroplaning when wet? Assuming road is dry are there any other issues that make this a bad idea? I plan on just taking it easy cruising at 70-75 mph max. Thanks In advance for any info or advice.
