Default Desert/Beach Sand Driving - Inflation and Wheel/Tyre choice

I recently got a 2013 Cayenne GTS .
It has Michelin latitude sport 295/35 on 21 inch wheels all stock.

Rear Tyres are almost new just couple of thousand KM.
Front ones are old, 4-5 mm tread remaining

I want to go for Sand Dune driving (Not aggressive dune bashing)

1. What Settings do I use on Cayenne?.
Off - Road mode + Center Diff lock. mentioned in the owners manual (Rocker switch pull up 2 times.)

2. Lowest safe PSI rating on these Tyres? recommended on road inflation is very high.
Michelin was not very helpful. They asked me to use only recommended PSI.

3. I read the smallest possible wheel size is 19 inch. due to rotor and break pistons on GTS.
What Wheel and tyre combination can I use for Off-road use (Sand).?

4. Any special care to be taken or any know break down issue with Cayenne due to Sand driving?

I will retain stock wheels and tyres as Offoad Season is about 3-4 months only.
