I have owned a few GT3 cars and now have a Spyder. Of course my DD is a big Ford F150 Raptor.
I feel the Spyder is a much better street car. The GT3RS is an amazing car (997.1 is what I had - I have not driven a 997.2) but I enjoy the Spyder more on the street. You dont have to go very fast to enjoy it. Plus it draws less attention from others than an RS. Also the Spyder is more forgiving going in and out of driveways or parking lots. So I would go Spyder if you are picking between the 2. However I agree with Mooty - my first choice for a DD is a new Cayenne GTS. But that isnt in the cards for me right now. Test drive the Spyder and you will know which way to go for YOU.

If the roof is an issue, then think of the Boxster S with a slight suspension tweak.

Since you have a Speedster, you already know these cars well.
A little 964, on correct tires must be a sight to behold with a couple inches of snow on the ground! An everyday rally car.
