For a top-end rebuild, what kind of break-in procedure do you follow?

I mean like - first practice session 75%, next session 85%.... At what point do you go flat out?

What did the engine builder say? Use a break in oil like Gibbs BR30. Change after the first short session. Then go to a full race oil like XP7 or XP9.
