If the buyer is in Arizona, he will definitely want to buy it from a Private seller and not a dealer. If you buy from a private seller, no sales tax vs 7.8% sales tax from a dealer. So for me, it is probably best to trade my car into the dealer because no one wants to do an in an out so the dealer can actually pay you less, but you get more. Crazy system.

I think there are about 20 States where private party sales don't pay sales tax. For an AZ buyer going through the dealer would cost them about 20k extra so we tend to look for private party sales. Not sure why a dealer wants to be a party to a transaction like this but that is between you and them.

And what if you're an AZ resident and have a trade in on a car at a CA dealer? Do you pay sales tax on the difference when you have the car shipped to AZ?
As an AZ resident I typically just sell my cars private and buy my cars private to make the transactions cleaner and avoid sales tax. It's a pain sometimes but worth it when you're buying $100k+ cars.

Not sure about the trade scenario, I am guessing as long as your taking delivery of the new car in AZ you are good, under those circumstances you pay the State sales tax rate when you register the car so you save quite a bit of sales tax as your not hit with city or county portions of the tax. When you trade your car in your really just selling it to the dealer so it should not change anything. In all of these cases you have to do the math on the cost of shipping versus the sales tax cost in CA versus AZ. My guess is it would still be favorable for even a 50k car to transport it.
