This is easy. The oldest one I could find as it's so old and slow I don't really want to drive it.
So that would be a 1949 356 Gmund in Silver. That would make good artwork.

Cannot "drive it" well I think you guys are forgetting that if the car is maintained as OP said-
you can rev the ***** off it. The right noises alone would be worth a big hassle
So, Carrera GT for me. I'd sit in it while on a two post lift and rev it and steer it around like a simulator.

I just realized that I should have started this off with my own answer to my own question, so belatedly here it is:
Either a 993 GT2 Leichtbau (they built only seven of these - it is a one of the 194 total Strassenversion (street version) cars but specially done through Exclusive to remain street legal with a full interior but without air conditioning and radio and with manual windows and lwb's) in Acid Blue (color code 354) or a 996 bodied (I just think it looks more menacing than the 993 bodied version) GT1 in black (which also doesn't exist) with yellow belts and deviated stitching to match the calipers.
