This is called cochinita pibil. A real mexican receipe from the colonial region (center of Mexico - Guadalajara). It is long and painfull to make but if you really want the receipe, I'll find it for you!

This is one of my favorite tacos, with chilorio and al pastor.

Pork, chicken or roadkill of pork or chicken only. Now you know why it is from Mexico

Maybe should I start a food thread on here?

I may only come drive once this summer as I don't DE anymore. For the moment.

Yes, I would like the recipe if it is not too much trouble. I haven't had a good pibil since the days when you could travel around Mexico on a motorcycle. And the Paris-Dakar actually went from Paris to Dakar...
But, for now i'll have to live dangerously by sampling la cuchina Charles.

Beef. Squirrels are hard to hit at this time of year. They have great traction on snow and ice.
