3 point vs 6 point concerns the safety belts, as you stated, HOWEVER, the reg (IIRC) state that safety equipment (which includes the seats) should be equal.....driver and instructor...... I know that Bob R. prefers 3 point belts with a roll bar and airbags, vs. a full harness if you don't have a cage........you will figure it out...I hope that you choose to go with 2 seats, as your instructor will be in a better position to help you, when he too doesn't have to worry about holding himself in place.....

Research for your "Safety System" is a good thing. The PCA DE Minimum Standards provide some guidance in this area.
2 Race seats with the OEM belts are ok. Think of air bags as part of the Safety System.
6 point harnesses and race seats would be required for both occupants.
6 point harnesses also lead to half or full cages. Remember you have to think of this as a complete system, unless you want your helmet to act as a roll cage. The 6 point harness will strap you in upright, the opposite of the 3 point OEM belts.
