Now the question, which would you pick? I haven't quite made up my mind, although I'm leaning towards the Porsche, especially with the colour of this 430...

Hmmm....yes the colour of the F430 is not exciting enough for me either, and of course I am more partial to the colour of the GT2. But I have driven a standard F430 and enjoyed it tremendously and the shifting was great (it was a 2006), so I will probably go with the F430 in this case. If it was a CGT against the F430, then it would be the CGT.
