Run a 924S in ChumpCar -- we couldn't shift from 3rd to 2nd without going to 1st gear first. Tried to fix it -- and realized it was a feature :-) and left it as is.

No, I use the clutch but late in the braking cycle. I will down shift just before the turn in or during the turn before apex.

Same car - same feet:
I use the ball of my foot on the brake and try to bang the gas with my heel. I don't actually hit it with my heel; the action of trying too gets you to make contact lower down with the side of your foot.
You should also consider making the blip last longer.

Interesting enough I tried on the street and I can see it is possible but I just need to bring it a little more to the left. I did see a pedal out there that would do this.

I have a spare Rennline throttle pedal available if you're interested in giving it a try. Can be mounted a little off center or you can use the toe extension as shown below. You could also easily fabricate a new mounting plate to use the heel extension that I cut off. $45 plus shipping, PM me if your interested.
