I spent a good 10 mins in sport seat, no way I can fit with helmet.
Knees and head touch.

Only chance is to remove the stock seat and put in a race seat on a fixed rail. It will solve your headroom problem but maybe not your legroom issues.

Finished day 2 at Bondurant in a 2014 Vette and headroom was not an issue. Interesting another student who is 6'1" and an instructor who was at least 6' had no issues. Cars had sport seats and I could easily place my hand above the helmet. The roof liner looked completely stock. I guess 6'2 is where you run into trouble. I wore a Bell helmet, instructor had a Stilo and forget what the other driver had.

As a point of reference this was an advanced racers group so no one had there seats positioned inappropriately.

Z06, although driven by pro driver. It's still an impressive lap time for a street car

It all depends on where the 6'x" is on the body, i.e. long torso vs long legs. I have trouble with brushing headliners and getting a race seat with high enough shoulder harness holes and I'm not that tall.
