so from a connector point of view how do you make these compatible with different system such as motec or aim

I buy extension cables, then cut off one end and solder my sensors on.

For AiM, I do the same as Van. When you look at the sensors, they have the connectors and 2 meter extensions that you can solder and shrink wrap together. For Motec, DTM connectors seem to be the popular way. I have one of those connector kits as well.
