MK;
I made up a little aluminum "shelf" bracket to hold the receiver to the roll cage, then velcro'd the display to the dash.
Of course, the RatDog interior is orders of magnitude uglier than yours.

Hey MK,
How have you been?
This is what I came up with and it worked reasonably well for mounting the pick up on both sides of the car. The device is a suction cup mount for a video camera. I stuck it on the rear quarter window on the inside of the car. The length of the arm allows the pickup to hang just inside the edge of the passenger or driver's side window opening depending on which side you have the beacon. It is by no means foolproof, but it isn't permanent either. I had to tap the back side of the Ultralap pick up to match the threads for the camera mount. My seats are cloth so I could velcro the display on any flat portion of the side bolster.
I assume you are going to Sebring this weekend?

This might be overkill, but here's what I did:
used a longacre roll bar mount for a switch panel
fabbed a piece of thin aluminum sheet with tin-snips
drilled two holes and secured it to the roll bar mount
velcro'd the ultralap receiver and the plate.. voi la
Very secure, and easily repositioned to capture the beacon signal or flipped if the beacon is on the left
