roll hoop and back seat use
Question for those who may know, Will the installation of a roll hoop cause the back seats to become COMPLETELY useless? I have a 2yr old that will have to ride back there once in a while...when he gets a little older.

Depends on the configuration of the roll bar/cage. The better it is made, the more bars it will have, thus less room. Some have removable harness bars and diagonals that will help like Safety Devices products. Some make the seat back either up or down, but not both.
Have him wear a helmet if you do put him back there when you do get one.

I seem to remember reading three or so.
In any case, a roll bar and a rear ocupant do not mix under any circumstances. In a collision, you're going to crack a lot of young bones on those fixed steel bars.
Even with roll-bar padding, it's like having Hank Aaron swinging at you with a bat coated in an inch or so of foam. Ouch.
Some of them can be bolted in and out pretty quickly, though -- at least if you've got a cab.
