Viper and GT3 or F430 Manual
I just bought a 996GT3 and I have a 2017 Viper ACR-E. I was expecting to keep the 996 long term though I really enjoy the Viper.
I sold a 360 Modena manual last year and miss it and now a rather nice F430 manual has come up.
Can't afford them all so the GT3 and ACR-E would have to be rolled into the F430.
What would you do? I can tell you that the Ferrari 360 or 430 manual is a much more visceral albeit less nailed-down car than the GT3 (996 or 997). The Viper is simply another animal altogether and I was looking forward to tracking it a bit but knowing full well it's far beyond both my ability and where I want to take a car on track.
F430 Manual just seems like a nice thing to have...

Well this is a tough one. The area where the F430 really stands out vs. your current stable is its usability and enjoyment on the road. For my money, it is really pretty hard to beat an F430 Spider Manual as a fun weekend sports car that ticks all the boxes for road use, but it is not suited for the track. I am not sure how often you'd plan to be at the track with your two current cars but it is worth considering.
My personal opinion is that 6 Speed F430s are pretty rare to come by and to your note, just seems like a nice thing to have! Maybe you could consider getting the F430 and picking up a cheaper track car to scratch that itch, like an E36 M3 or something you don't really need to worry about. That would strike a great balance IMO. You'd have one of the best road cars and a great and capable (but not intimidating) track car that you can drive with little financial worry which will greatly increase your driving ability as you push your and your cars limits on track.
My vote: F430

Appreciate the thoughts. You're quite right. Still mulling it over...seems the market has softened considerably and there's no rush!
