The GTS comes with 21 inch wheels with all season tires. Can the new 2025 Macan GTS run with 20 inch wheels either in all season or summer tires ?

Yes. I run 20" GTS replicas (previous gen design) with winter tires. Just be sure to check the options in the TPMS menu as you need to update if you change the wheel size.
