I’m completing a build and an order for a ‘22 Macan S. I don’t have a need for the Sport Chrono package because I’m not interested in the lap timer, launch control or button on the steering wheel. However, I would like to confirm that my car with air suspension and PASM will still have all three drive modes of Normal, Sport and Sport Plus. Asking since one of the salesman I talked with said I had to order Sport Chrono to get Sport Plus. Don’t think he’s correct.

I believe he's correct. If you're not interested in launch control, I doubt you'd be interested in what sport plus has to offer anyway?
Given the date of the original post the reply is likely irrelevant since you already ordered, but our 2022 Macan S has PASM but not sport chrono and it does have Comfort, Sport, and Sport Plus mode - there is a Sport button that makes it go into 'Sport mode' and sets PASM into 'first stage' and when you then push / set the PASM button to its second stage (both lights light up) the screen reads "sport plus mode". I have not tried whether this means it has launch control or not.
Sport Plus is a must to enjoy the Macan S to the max. I've only used launch control 3 times in 6 years, and no need for the timer. The sharper engine, trans, and suspension settings are great on those occasions where the GT3 is put away but I want to have a little fun on nice roads.
Obviously personal preference - but honestly where we live it is rather flat, all roads are straight, nothing too exciting - and i'm not intending to drag race at a stop light. Though if you got some fun winding mountain roads around where you live I totally get how a little bit extra performance would make sense!
PASM is chassis category and Sport Chrono is engine category. Both are independent and have 3 settings including sport plus.
With no sport chrono, you still have sport plus for PASM (chassis).
