Is there a way to change things around so the PCM doesn't always default to Apple Carplay? It's the first thing to come on and sometimes just pops up as if it had a mind of it's own.

Go to Device Manager and switch from CarPlay to Bluetooth.
You may have to disable/delete your BT pairing to bring up the option of changing your default setting.
