Put the GTS order in
Put the deposit in yesterday. It's going into production pretty quickly and the dealer is saying we could get the car as early as the second week in April. We spent an absurd amount on money on options. Wife and I both agreed that Carmine Red and the GTS leather interior were overpriced but we liked the look so we had no choice but to roll our eyes, shake our heads and tick the bloody box. We got a fair bit of leather options inside but we don't have a sunroof since we never use it in the cars we have now. SC mainly because I didn't want to regret not having it later.

For $2200 you would get Keyless entry, auto diming mirrors, a (panoramic) sunroof, and rear heated seats.
Unless you NEVER sell this thing, you need to add Premium Plus. Resale will kill you on a $100K Macan with no keyless or sunroof. I think your advisor is doing you a disservice.

May I also suggest PDLS? For $500, the really make the front end aggressive.
I can appreciate the personal preference on the leather covered surfaces but if you want to shuffle the money around a bit, the Porsche crest on the center armrest is probably the one you'd miss the least.

I'm with you on not having a sunroof. The glass radiates too much heat into the cabin here in Vegas during the summer. If it was a normal sunroof with a thick shade, then it wouldn't be an issue. With just a thin, see-through screen, and large glass area, it is a no-no for me.

Our SA strongly advised us to get a sunroof for resale. It would make sense if we sold car after 3-4 years but we keep our cars for a long time. 8-10 years is typical. So not having a sunroof will make not difference to our car's value when it's time to let it go.
I'm not big on the Porsche bolster crest but with GTS embroidered on the seats as part of the interior package wifey wanted the logo somewhere in the car so it went on the arm rest.

My initial preference was to not have the pano roof, mostly because of what I perceived to be a heat issue, but it has not been a problem at all, at least with Maryland temperatures, because the sunshade is actually quite effective. The glass can be tinted for hotter areas. I also like the airiness of the cabin.
Is it one more level of complexity? Sure. I also assume not having a pano roof will help with the low roofline for the rear seats.

I didn't get sunroof on mine since I wanted for more headroom and less body roll. I would suggesting adding options and then cosmetics last. In my opinion you should add.
Keyless go
Vent seats
LED lights for not much more since you got a GTS
instead of stitching I would rather have
Burmester audio
PTV for ease to drive during winters
I just traded for a turismo since I needed more room in back.

I had a lot of the leather options on my cayenne GTS and decided they were a waste and did not order them on my Macan GTS. Don't even realize they aren't there. I am glad you got the black handles something most overlook and IMO makes the car when everything else is black accents. All you need is a red GTS logo for the side blades. I had mine made up in silver to go with my Silver gts. BTW I almost went for the red it looks fantastic in the color.
I don't see the LED headlights which IMO is a must have. They are amazing. I also am very happy I got the PTV+

I hate sunroofs. This preference is obviously subjective, so feel free to discard.
To those who worry about the resale value: if your are planning to dump the car within 3-4 years, then you might as well lease. In which case the resale value is the dealer's problem.
And if you're planning to sell it in the longer-term perspective, then the contribution of the sunroof factor is going to be negligible - the overall condition and mileage will play a much larger role.
