Tires for 2000 Boxster

I just bought my first Porsche (2000 Boxster with 35,000 miles), and am seeking some advice on tires. I live in Los Angeles, so I thought summer tires would be good year-round -- it is always sunny (remember how it never rains in Southern California?), and my temperatures are usually 50-90 year-round. I am retired and while I drive about every other day, it usually is just local. My driving is probably split 50-50 between highways and surface streets (I live near the infamous carmageddon 101-405 interchange!). So I am not looking at longevity for the tires but performance. That said, I do not drive it hard, but I do want to feel grippy. All things equal, I would most prefer quieter tires that will not interfere with my pleasure driving it with the top down.
So I am looking for recommendations.
The current tires are 10 years old, and my mechanic said although they have good tread (3/8") still, 10-year-old tires cannot be trusted.
Current tires: Michelin Pilot Sport, 205/50ZR17 (on front), and 255/40ZR17 (on rear).
The purchase paperwork says the car has the sport package with 17" Boxster-Design wheels (in case this affects what size tire to get)
A tire place recommended HANKOOK®VENTUS V12 EVO2 K120. I think I remember Pirellis on one of my cars from years ago as performance tires (maybe my 1964 Mercedes?)
So this size good? Think performance summer tires a good choice? Brands preferred, keeping in mind quiet? What tire pressure recommended too?
