Default 997- waxing painted interior parts?

My 997 has painted sport seat seat backs, center console, door pull handles, and door [open] handle escutcheons.

Any tips on how to protect them, applying polish and wax?

I am concerned abut getting product on the leather or plastic parts surrounding.

Just use your favorite quick detailer. I like Adam's.

If you really want to wax/sealant, just go slow and easy. Try q-tips to apply, or use painters tape and mask off areas you want to protect.

You can tape off these area to keep any product from getting on your non-painted parts. Look into Klasse AIO and Klasse Sealant. Both of these work great on interior parts. From there, keep them clean.
