There is an extended warranty from "Universal Warranty Corporation" that will be transfered over to me....should that give me some peace of mind?

In reading posts here on extended warranties and replacement of coolant pipes, might not be too peaceful!

What are cooling pipes exactly? Is this something that inevitably needs replacing on a Cayenne, and what is the cost of a job like this?

Independent warranty sucks. There's always a deductible.

Plastic are usually for intake, coolant hose are made of rubber and sometimes can cost up to 200$ for one little elbow pipe.
