I think to switch btw F and C, you just hold the recirculation button in conjunction with the +/- buttons for a few seconds.

Try to figure out the heating, defrost and A/C controls on an old 911 and you'll understand the meaning of "German Engineering"
Having owned 911's for years I never gave "Manuell" a second thought after getting the Boxster
