Yes, but isn't that because the fans have to operate more often and for longer?

No. The temperature stays below the activation temperature for the fans.

My fans only come on when I am stuck in stop-and-go traffic, or when I am idling for a long time. This hasn't changed since putting the mesh on.

Do this experiment: Let your car idle for a while until your fans come on. Keep a mental note of the temperature gauge needle position when the fans come on (it's a bit after halfway on the gauge). Let the fans cycle off. Go drive. Observe that the temperature gauge needle never reaches the point where your fans would turn on.
