PCM audio preset to iPhone

Just beginning to make friends with a 2014 panamera 4s hybrid. On start up audio defaults to FM far too loud. I wait for source to offer Bluetooth then iPhone connects.
how can I change start up audio to default to streaming? And with lower volume?
