Default Pedal Height Adjustment?

I'm no Ricky Bobby, but I like to attempt to heel toe shift- but the brake pedal seems like it's a mile away from the throttle and short of standing on the brakes, heel toe doesn't seem possible.

Is the height of throttle or brake adjustable with the OEM pedals? Do I just have to get an aftermarket set?

Yep. It's ridiculous. The Rennline adjustable pedal is a great option.

My 996 Turbo is much closer alignment. Have not figured out how to heel toe with the 997 turbo yet...

997 if you're driving like you need to drive to use HT the placement is perfect. For street driving you're not into the brake enough.

The rennline adjustable pedal will allow for this, but then if you're driving on track it may not be right and will need to be adjusted for it.
