Is this shady or am I paranoid?

Exactly, I'd bet money that the ranges 5/6 on the OP's car are not genuine because the numbers are too low. The engine is just spinning too fast in those ranges to get numbers that small, particularly since it has to come down through 5 after hitting range 6.

Those 5,6s don’t scare my, probably a glitch, esp if car has software installed. Agree, I’d use those as a bargaining chip, even push them to give you a aftermarket warranty. Worth a shot.
Dont get too mental about rev reports, for $250 yours can be crystal clear too. They’re easily wiped clean

My only and biggest concern on the list provided is the fact that they changed the clutch. Porsche has been racing in endurance racing for decades and one thing they know how to do is clutches. It has been my experience that if the clutch is bad on a low mileage Porsche, there is much more that may be wrong than not. I personally would tread carefully and pay top dollar for an in depth PPI before purchasing as these cars are not cheap to maintain or to fix.

That literally is a expense that EVERYONE that has a mezger will sooner or later to do, this car already has it done be grateful not paranoid. Pinning the coolant pipes is a 1k job. When people do this, because the engine has to be dropped, usually they make some extra preventive and work that would need an engine drop. From changing the rubber coolant hoses, new clutch, lsd, cam actuator/pin cams, change plus and cables, add upgraded inlet pipes, etc. Biggest cost on some of these maintenance things is dropping the engine, with it out it's just a couple of hours extra + price of parts.

They received the car from the previous owner. The previous owner probably and he stated he did all the work. The dealer got paperwork and filled them in and made it seem like they did the work. My advice, search for the owner and ask him. Personally, I would walk away. Most dealers distance themselves from situations like this. Think about it, now they have to probably warranty the service. Very odd situation man. I feel your vibe.
Sounds to me like the dealer did the right thing and probably is a pretty good dealership. It also sounds like a car thats worth looking at further. The over revs don't bother me at all. Where's the car?

Dealer stopped responding when I asked if they could just put me in touch with the previous owner so that I could learn about some of the car's history. Obviously I offered to have them give the prior owner my contact info as I did not expect them to disclose his info to me. Between the extensive repairs at such low miles, a tow record to the dealer at the time of sale which could not be explained, the recent range 6 over revs, and the dealer going radio silent about speaking with prior owner, I decided it was most prudent to just move on.

I wouldn't put you in touch with the PO either.
The shop could have put lipstick on it and sold it pretty much as is. They sound like a reputable shop who cares about the vehicles they sell so they did a lot of work to make the car really nice.
Check with Porsche, the over Rev report is far from infoulable and they have ghost readings on them all the time.
It's a business, if they have others looking at the car why would they jump through hoops for a customer who is expressing doubt in them ? This is not unlike any other business.

I'm not complaining or saying the dealer did anything wrong. I just didn't have a good feeling about it and decided to move on.

Beyond the over revs, what on earth happened to that clutch that it needed replacing after 26k miles? Must have been someone new to driving a manual behind the wheel I guess.
