Just noticed that when I accelerate hard the car feels to dig in slightly on the left rear. Tyre pressures are bang on and the shocks are fine. Any ideas ? Diff maybe ?? FYI this is a gen 1 997 GT3 that has recently seen more track work than road work last year.

get your alignment/geo checked. could be toe off. also are your tires worn evenly?
could be diff, but I would check these other things FIRST.

Excellent suggestions from all. OP, if the alignment/geometry checks out fine by a good shop that know these cars and no fastener are loose, then I'd suggest replacing the rear thrust arms(aka compression links). Even 0.5mm of play at the thrust arm bearing will result in throttle torque steer.

Thanks for the responses gent's. I will look in to it but the geo was done recently. Quick question, would changing the wheels back from my summer OZ lighter setup to the standard winter rims have any effect on the geo ?
