I'm in Toronto for the next few weeks; does anyone know where I can rent a tack/race car to use at mosport or Shannonville.

Not sure on the car rental part but IMSA/Continental Tire Sports Car Challenge will be at Mosport this weekend. I'll be there racing in the BimmerWorld CRC Brakleen BMW #82. Come out enjoy some good racing action. Stop by our rig and I'll show you around the cars.
