Advice on 997.2 GT3 Sway Bar settings

My car was recently in at the OPC and they did a full wheel alignment after I had my front shocks and mounts replaced. They told me that they had to put it back to "factory" settings as both the front and rear sway bars had been adjusted up to the first notch i.e. they put them both back to zero.
So with both bars set at the first notch, what handling characteristics would the car display vs the "standard" setting?

exactly...sway bar has nothing to do with the alignment. with the car sitting flat the sway is not working and is in a unloaded position. The sway bar does not come into affect until the suspension moves up and down.
I can understand needing to adjust camber, caster and toe...but the sway bar has no affect on alignment geometry.

Well tell them to set the sway bar back where you had it. Even if you don't know which holes, there should be marks to make it easy to see. They should never mess with them.

I'll put it back myself as I have to stick it on the hoist next week for new rear tyres and replace a brake duct I sacrificed last weekend at a track day.
