Nice! I'm a big fan of the loaded cars...makes it much more pleasant experience. Because, you know, the 3 lbs you saved from not having a leather dash isn't going to turn you into Vettel.

Schumacher maybe but definitely not Vettel. 
The negligible weight penalty of electric seats, a sunroof or some extra leather is easily justified by the enjoyment of having more comfort on longer drives. The GT3 is already considerably lighter than most modern sports cars. Simply running with half a tank would probably balance the equation vs. a low option car.
