I'd go for Gloss Black over a matte black like PCM 3.0. I'm going to try to dig up a photo of a 997 Turbo S that we had with gloss black interior components. It was the first time I'd seen it and I thought it looked incredible. Especially the center console, so much nicer than the soft touch.
I think I have pictures on my computer at home, I'll try to post them for you.
The other great thing about painting PCM 2.1 is that all the text for the is on the buttons themselves so you can paint the bezel and it can look factory. I think the painted PCM 2.1 looks better than a painted 3.0 which looks like zebra stripes.
