For most people, I think it comes down to wanting to try something new (move to a 991.2 GT3), need to sell to fund something else (like home repairs, purchasing a house), or family/time circumstances (new kid, want to be able to enjoy their car with them, or are travelling for work and do not have time to drive). For the last one, specifically the do not have time to drive, I don't think that should cause most people to sell, but the other ones I think are pretty common reasons. Mostly wanting to move into something else. That new car won't necessarily be better or worse. Just different.
In addition to all that Bxstr lists above,... it probably also depends on what your definition of "holy grail" is ... To some, there may be small nuances / differences between a .1/3, and a .1 3RS,... or even any of the .2 models. So sometimes I would suspect there is movement within the 997 GT3 range too.

I get it - thanks. Makes sense and I too suffer from a "wandering Porsche eye". I'm interested in a GT car, most likely something in the 996 - 997.2 gens, but worry that after all the hunt and the changing out of cars, am I really that far ahead?

You should keep in mind that your Carrera T is regarded as one of the best cars in the 991 range by many. If you enjoy your Carrera T, which I am sure you do, I wouldn't be in a rush to sell unless your ideal car was for sale. Also depends what you use it for. If you drive it every day, or quite often, the Carrera T is probably for you. If it sees 2-3k miles of weekend summer driving as mine does, the GT3 may be the better choice for you.
