How do I know which ones need replacing?

You're most likely going to have to visually inspect the pads and see which ones wore down to the brake sensor.

Yep, visual inspection. Might be able to tell with the wheels on, but easily found with them off.

my understanding was that two pairs of fronts to every pair of backs.

probably. much more disparity if you track it.

in any event, in order to save $ at the stealership, best to tie back those sensors anyway and monitor visually/routine maintenance inspection.
