I just bought an 08 997s. When I hit the sport button not only does it change the suspension but it also changes the sound of the exhaust. I watched the Fabspeed video for the cold air kit and it has me wondering if I install one of the kits does that delete that feature (make it "louder") all the time. I am new to Porsche but the guy I bought the car from said that was a feature he looked for for a long time. Obviously it is something that would be easy to return to original. I also wonder about changing Cats and mufflers with that "Sport" feature.
Regarding the exhaust components, we sell 3 versions of mufflers for the 997: Maxflo (no valves), Valvetronic Maxflow (has valves like your car), or Supercup (no valves, very aggressive).
All other exhaust components on your 997 are no different on than that of cars that do not have the Porsche sport exhaust. This means if you want to change headers, you can do so and keep your factory valved mufflers. Or, if you want to add our X-pipe with high flow cats, this also will not affect your factory valved mufflers. Hope I answered your question clearly.

The Cold Air Kit does not delete the PSE (Porsche Sport Exhaust). You will however notice an increase in induction "roar" under high engine load, kind of like taking your PSE to the next level.
