Default TPMS and DE's

Is it ok to run wheel/tires w/o TPMS at DE events?

Well, I don't care. And I promise not to tell anyone else.

Only if the constant alert lights don't distract you.

Nor will.

On a more serious note... Some vehicles do funky things when the TPMS is not getting the information it expects. Our CR-V, for example, doesn't allow you to disable traction control when TPMS is reading low or not at all. I run a dedicated set of snows on that car and didn't opt for the TPMS sensors.
