What's the process for getting your rims painted? What type of shops would I search for that do this type of work? Are there any issues with chipping more so on a painted rim?

Firstly you have to decide whether you want a rim which is flushed to the outside, or has a lip. This is a matter of personal preference. I am partial to rims that are flush on the side, I believe they look bigger from the side. The ones with lip look fatter from a 3/4 view but look of smaller diameter from the side.

Here is a rear quarter view of my previous car, with matte grey HRE's P40s
Nick: those wheels look sensational. I hadn't focussed on that whole "lip" issue, and you're absolutely right IMO that rims without the lip make the wheel look better and "meatier".

Considering having them powder coated. Not sure about paint chipping but suspect that is always a possibility.
