I bought the Eddie Bauer 3in 1 booster seat (Target ~$120) and it fits pretty well in the back of my coupe. Not sure about cabrio. You do have to use the locking clip to get it to stay in place. I was going to use the LATCH, but with the bose system, getting to the top anchor seems to be a pain, and it seems pretty secure with the belt and locking clip.
It's fun with her riding back there. She seems to enjoy it, and she's close enough to you that if she spits her pacifier you can pick it up off the floor and hand it back to her.
I did put a towel under the seat to protect the leather though.

I suggest going to a large retailer like Babys R Us and trying some out. Many have bottoms that are too wide; I got an Eddie Bauer leather seat a year or two ago that has a narrow base and fits quite well (but I think it is discontinued). The back of the cab seats is a little forward compared to coupes. I also simply removed the leather bottom of the rear seat - it is attached with velcro.

There are no latches in the cab, my twins were already facing forward when I put them in the cab. Used used Eddie Bauer, though had to take the seat cushions out. They are in boosters now using the fisher price seat.

I have 3 kids 5 and under, you can install any LATCH seat in the front if you get or have the airbag deactivation key (panel is installed inside lateral dash passenger side, for the back I suggest removing the velcro lower seats, most booster seats without a back fit fine and you can adjust the shoulder belt wtih the tether (found on most boosters without a back) to the appropriate height.

I tried a Britax Marathon in the back seat, and it fits (facing forward), but the front seat has to be all the way forward. Since babies must seat facing rearward, I figure I can't get my little one in the Porsche at all until he's about a year old. I have a Volvo and a Subaru for the kid.
I think the law also states that you can put a rear-facing seat in the front passenger side if the rear seats are not available, but I don't think I want to do that.
