I tried dying (same color) a very small patch area on a 993 canvas top a few years ago, it made the canvas more stiff and brittle. So decide to stop. I just don't know this dye you reference. If was me, I would leave the patina looking top, as there is no going back, plus you will need to do inside the top.
the only product I used on tops is sem. I did a 'vinyl' top on a lincoln. its good on most any fabric or plastic. Get a color matched and clean the top extremely well and scuff or brush it extremely aggressively
