The East Coast has great racetracks:
Watkins Glen: Formula 1 used to run here. My favorite by far.
Lime Rock Park: A living legend.
Road Atlanta: how doesn't know this one
Virginia International Raceway: I haven't been there, but people like it more than WGI
Road America: I want to go there
Summit Point:
Sebring
Daytona
Homestead
West Coast:
Infineon (Sears Point)
Laguna Seca
Willow Springs and Streets of Willow
Buttonwillow
Thunderhill
California Speedway
Las Vegas Speedway
Generally speaking, the racetracks on the East side are beautiful (lots of green grass, mountain etc.). However, there is huge limitation due to the weather: lots of rain, lots of snow.
On the West Coast, you have track days from January through December, East coast I would not run before May and beyond September, it's nuts.

I agree, the Eastern/Southeastern USA is much more heavily endowed with great road racing circuits. IMHO, Eastern North American tracks to die for:
-Virginia International Raceway (Milton, NC)
-Road Atlanta (Braselton, GA)
-Mid-Ohio (Lexington, OH)
-Road America (Elkhart Lake, WI)
-Mosport (Bowmanville, Ontario, Canada)
-Le Circuit Mont-Tremblant (St Jovite, Quebec, Canada)
-Watkins Glen International(++++!!!!, personal favorite: Watkins Glen, NY)
I've done all of these tracks and have in-car videos of each I'd be glad to share if you decide to really do such a trip! Let me know! I can also help with suggestions re: Motels, restaurants.
I compile and publish a schedule of "driver ed" events at these tracks each spring. Let me know if you'd like to be on my distribution list.
