They have to do it that way, or else you couldn't rev up the engine while performing Heel and Toe. I was lucky enough to discover this the easy way, when bedding in brake pads, but if I did have a Turbo, I would also have considered this technique to keep the boost up.

I knew my C2 with E-gas did this, but I had rashly assumed that it did this because it's a PSM car. fascinating to learn that it's really an E-gas trait. I shall spend 2007 making sure that students with E-gas Porsches find out what left foot braking can do for them.
