Default 1999 996 C2 Temp. Question

Hi, I just signed up on Rennlist. I have a 1999 996 C2 W/ 87K Miles.
I just changed the water pump (OEM) & changed the Thermostat to a 160f - flushed system using Porsche Coolant. new Belt & 1 Idler...
Made sure coolant level is good.
Now the car is running at about 190f - 200f
This temp is higher than when i had 187f thermostat & noisy water pump.
All work done by my Mech not Porsche.
Any ideas as to what is going on?
