There's a fine line between automobile "desirability" and "collectability". While both are influenced by supply and demand, the former appears to be driven by a heavy dose of nostalgia, while the latter is mostly defined by rarity attributable to low production, advanced engineering, and unique styling.
For insight into the distinction here, compare the general characteristics of cars passing through a Barrett-Jackson auction and, say, an RM auction (or any auction held icw a Concours D'Elegance show).
But frankly, like many subjects kicked around on rennlist, there's no real consensus on this topic.
