I believe it depends - a full leather interior was an option.
I would recommend looking at the codes on the inside of the trunk hood and see what options came with the car - that should tell you.
I also believe all 4Ss had full leather interiors - and Turbos, and 40 year.

All depend on the options. Look at the White sticker under the hood and jot down the options code - look them up in one of the option decoders... either in PET or do a Search here in Rennlist. As for the dash, generally the stitched seam on the edge of the instrument cover is only on the leather dash. Code XMG is Instrument Surround in Leather for example. There are many more individual pieces.

Brian is pretty much correct. Leather seat faces, shifter boot, and steering wheel cover are normally standard. In order to get a leather dash it had to be ordered as an option with either the full leather interior option or perhaps as a single item by itself.
Brian also stated it correctly that the best answer is the sticker under your trunk lid, or, if you have the original owners manual, that same sticker is stuck to one of the front pages in that.

Thanks for all the info> I drove and nursed a bannana yellow 911t for 4 years and that car put porsche in my dna. Well it's always been there.
