I also have an AT&T phone (iPhone). A few months ago, I met up with some friends from Canada in AZ. Since their cell phones were Canadian numbers, I just added a Canadian calling plan for about $4.99 a month and then cancelled it about a week later. I think AT&T's offerings may have changed recently but I'm pretty sure you can just add what you need and drop it when you no longer need it.

Also, I added the service over the phone with an AT&T rep. but I was able to cancel it right from the iPhone using the free AT&T app.

Stupid follow-up question.......

Does Canada have the same electrical outlets? I know on my travels to Europe that I had to take a plug adapter kit.

I am on business right now in Toronto, and have my laptop plugged into the wall at Second Cup Coffee Shop, without any plug adapter.
