I know that they did, but I can't find them, even on the Michelin website. They now seem to offer only the Pilot Sport and Sport Cup in that size.
PS2's are listed for the front size. 225/40 18.

IIRC (it's pretty foggy), Porsche moved from 265/35 to 285/30 (for the 18" wheels) when they did the '02 refresh. While the wheel designs were different, they were (this is the foggy part) the same width (10"). I don't know how wide a tire you can put on an 18x10, but it seems to me that if they already added 20mm to the tire without adding any wheel width that another 10mm might be pushing it.
FWIW I run the 265/35 in both the PS2 and the PSC on 18x10s. Works great on road and on track, so I wouldn't suppose 275/35 is going to be a problem.
Anyone have better info or expertise on this?

You can put hte 295 on your 10" rim no problem. It works better with a 285 tire which is actually the optimal size for the rim width. But still, no problem at all going with 295/30 in the rear. I would even suggest moving to the 235/40 tire in the front if you have the 8" rim to help balance out the understeer you might induce by increasing the rear track without following suit up front.

THe 295/30 will be OK. As Dell stated above, the 285/30 is perfect for a 10" wide wheel. While a 10.5" width wheel is optimal for the 295/30, it will work on a 10" wheels. Here are the specs from the Tire Rack site.
--Tire Size------Rim Width Range
275/35 ZR18 -- 9" - 11"
275/40 ZR18 -- 9" - 11"
295/30 ZR18 -- 10" - 11"
295/35 ZR18 -- 10" - 11.5"
