I'm not sure, but I think Kelly Moss Motorsports in Madison Wisconsin 608-274-5054 could do it. I believe they still make a complete carbon fiber body too.

What is the advantage in having the sunroof delete. I would think it would make the car lighter, stiffer, and thus handle better? I rarely use my sunroof.

everything you've described PLUS more headroom for the tall guys, especially with helmets.

removing weight from high up will do more good than down low. this will effectively lower the center of gravity giving you better handling. not sure how much extra weight is up there though, 20lbs?
