Most shippers are brokers that take your deposit and then find a truck willing to take the job. If you pay $700, your car will never be picked up since others are paying more.
Insurance by shipper is your only guarantee that you'll be paid for any damages. Get one with little or no deductible.
I had good luck with DAS and National. DAS owns its fleet and you can save by getting it terminal-to-terminal. National is a broker but they are pretty upfront about price/realistic PU time. Both have good insurance coverage.
If you don't ship enclosed, it'll be hard to see scratches when you get the car, esp this time of the year (snow season). Enclosed trucks also are smaller so they get filled faster -- you'll get your car faster. It's worth the extra $200 but I personally shipped open to save a few bucks not knowing that scratches will not be seem upon delivery (luckily not an issue for me). Always specify top carrier so you don't get other car's leaking fluids from top.
