I'm pretty sure this will work, but checking if anyone knows of a hidden problem.

I have a leaking heater core. I don't have time right now to fix - I will change out eventually when I have more time. My plan is to bypass the heater core using a male to male hose adapter.

That will work fine. Although heater cores r very simple in our cars. It would probably take another 30min to just replace it.
